The 2012 wine year full of paradoxes, saw the birth of a great vintage in the midst of difficulties. Nature proved unpredictable and authoritative through a series of climatic events that hit the vineyards.winter and spring frosts, torrential rains, hailstorms, cold snaps during flowering and high temperatures in summer.

Redemption came in August. A hot and dry climate, combined with a low yield, stopped the hygienic pressure and favored the ripening of the grapes. The beginning of the harvest was distributed from 10 to 26 September, depending on the terroir. The tasting of the grapes was promising, with an exciting balance between freshness and richness.

Dom Pérignon Vintage 2012 tasting notes

The nose: The bouquet is complete and varied, with a mixture of flowers and fruits, then vegetal and mineral. The bouquet is tactile and subtly draws us into its wake. Powdery white flowers with the sweetness of apricot and mirabelle. From the freshness of rhubarb and mint to the minerality of ash. White pepper.

The palate: The palate is dominated by energy. After an inviting opening, the wine quickly vibrates and then literally explodes. The shower bubbles, the feeling is invigorating. Channeled by the acids and bitters, the finish tightens and becomes penetrating. It leaves its mark ginger, tobacco and toast.
