Dom Pérignon – Vintage 2012

The 2012 Vintage, full of paradoxes, saw the birth of a great Vintage amidst difficulties. Nature proved unpredictable and authoritative, striking the vineyards with a series of climatic events: winter and spring frosts, torrential rains, hailstorms, cold spells during flowering, and high summer temperatures.

Salvation came in August. A hot and dry climate, combined with low yields, alleviated hygiene pressures and favored grape ripening. The start of the harvest was staggered between September 10th and 26th, depending on the terroir. Tasting the grapes was promising, with an exciting balance between freshness and richness.

Dom Pérignon Vintage 2012 tasting notes

The nose: The bouquet is complete and varied, with a blend of flowers and fruits, then vegetal and mineral notes. The bouquet is tactile and subtly draws us in. Powdery white blossoms with the sweetness of apricot and mirabelle plum. From the freshness of rhubarb and mint to the minerality of ash. White pepper.

The palate: Energy dominates the palate. After an inviting opening, the wine quickly vibrates and then practically explodes. It's effervescent, the sensation invigorating. Channeled by the acids and bitter notes, the finish tightens and becomes penetrating, leaving behind traces of ginger, tobacco, and toast.
