About the manufacturer
Bellevue
Bellevue is a French cheese dairy with a particular passion for producing soft cheeses with a washed rind. The winery focuses on combining traditional cheesemaking craftsmanship with modern quality standards – a philosophy reflected in every product.
Chaumes is the flagship of the production: a semi-hard cheese with a characteristic orange-red washed rind that gives it its distinctive appearance. The rind is regularly tended, which gives the cheese its creamy texture and spicy, slightly nutty aroma. In the mouth, a wonderful balance unfolds between robust umami notes and a smooth, supple consistency.
What sets Bellevue apart is the consistency and care taken in its production. The cheesemakers understand their craft and respect both tradition and the individual characteristics of each batch. This makes every Chaumes a reliable delight – whether enjoyed on its own, with bread, or as an exciting accompaniment to a robust Red Wine.
At Wine In Time you will find Bellevue products that come directly from trusted sources, bringing you authentic French cheese culture.

Bellevue
The Bellevue Chaumes 2005 is an exceptional Sweet Wine from the Bellevue estate in the Loire Valley, specifically from the renowned Coteaux du Layon. This sub-region is world-famous for its lusciously sweet Chenin Blanc Wines, which benefit from the autumn mists of the Loire and are susceptible to noble rot. The Bellevue Chaumes 2005 is a mature example that has used its time to develop complexity and depth.
The grapes were harvested late and selectively picked to preserve their natural sweetness and concentration. In the glass, it displays a golden color with amber highlights – a sign of this wine's mature character. On the nose, aromas of candied apricots, honey, quince, and a hint of orange zest unfold. The sweetness is balanced by a lively acidity, which lends the wine structure and elegance.
On the palate, the 2005 Bellevue Chaumes impresses with its lush fruit that never feels heavy. The balance between sweetness and freshness is remarkable – the wine practically floats across the tongue. The finish is long and harmonious, with a subtle mineral note reminiscent of the Loire's slate soils. At 10,5% alcohol, it remains light and lively.
