About the manufacturer
Bollinger
Bollinger is one of the most prestigious Champagne houses and originates from Ay in the heart of the Champagne region. Since 1829, the house has embodied a distinctive philosophy: authenticity over trends, complexity over simplicity.
What makes Bollinger special is its obsessive attention to detail. The house cultivates its own vineyards, thus controlling every step of production – a rarity in Champagne. The grape varieties are selected with great care, often dominated by Pinot Noir, which lends the Champagne power and depth. Also characteristic is the long aging on the lees: this results in the creamy texture and intense aromas that Bollinger enthusiasts instantly recognize.
The cuvées are not sweet or delicate – they are assertive, mineral, sometimes even slightly spicy. The style can be masculine, but never raw. What's special is that many bottles are filled as "Recemment Dégorgé" (RD), meaning the sediment is removed very late. This greatly increases the complexity.
At Wine In Time you'll find Bollinger's classic Wines, selected by someone who truly knows Champagne.

Champagne
Bollinger Special Cuvée is the flagship wine of one of the most traditional Champagne houses in Aÿ. Since 1829, Bollinger has stood for uncompromising quality in Champagne – and the Special Cuvée perfectly embodies this philosophy. It is made predominantly from the red grape varieties Pinot Noir and Pinot Meunier, complemented by Chardonnay, and is partially aged in oak barrels. The high proportion of reserve Wines from several Vintages gives this Champagne its characteristic depth and complexity.
The vinification follows the strict tradition of the house: over 60% of the base Wines ferment in small oak barrels, giving the Bollinger Special Cuvée its distinctive structure. Extended aging on the lees ensures a creamy texture and subtle spice. The result is a Champagne of rare individuality – powerful, but never overpowering.
On the nose, aromas of toasted brioche, ripe apples, and delicate spices unfold. The palate reveals a wonderful balance between freshness and richness: crisp fruit, fine minerality, and a hint of nut and honey. The finish is long, elegant, and marked by a subtle bitterness that invites another sip. This complexity makes purchasing Bollinger Special Cuvée a decision for true connoisseurs.
