About the manufacturer
Littorai
Littorai is a Californian winery specializing in the production of high-quality Pinot Noirs and Chardonnays. The name comes from Latin and means "coastline"—a reference to the maritime terroirs of California's coastal regions that the winery utilizes.
What makes Littorai special is its uncompromising focus on single-vineyard Wines. Instead of mass production, the winery relies on intensive collaboration with select vineyards such as Hirsch Vineyard or Charles Heintz Vineyard. These partnerships allow them to authentically express the unique characteristics of each site.
The winemaker behind Littorai follows a purist approach: minimal intervention in the cellar, natural fermentation, and respectful treatment of the raw materials. The result is Wines of impressive elegance, complexity, and aging potential. In every glass, you can recognize the terroir's signature and the meticulous craftsmanship.
At Wine In Time you will find a carefully curated selection of Littorai Wines that will transport you to the fascinating world of Californian coastal terroirs.

The Pivot Sonoma Coast
Littorai is among the pioneers of biodynamic winemaking on the American West Coast. Founded by Ted Lemon, one of the few Americans who once vinified in Burgundy, the winery is known for Pinot Noir and Chardonnay of understated precision rather than Californian opulence. The Pivot comes from various carefully selected parcels along the cool coastal slopes of California , where fog and proximity to the sea ensure a long, slow ripening process.
The grapes are harvested by hand, some are fermented whole, and the wine is aged in used and new French oak barrels. Biodynamic farming and minimal oenological intervention define the winery's philosophy – here, the place should speak, not the technology in the cellar.
The nose unfolds a symphony of red cherries, wild strawberries, and a hint of undergrowth, underpinned by delicate spice notes and a salty, mineral freshness. On the palate, the 2023 Vintage is firm yet juicy, with a silky texture, vibrant acidity, and fine-grained tannins. The finish is long, cool, and carried by a subtle spiciness that lingers long after the last sip.
