About the manufacturer
Dujac
Dujac is a legendary winery from Morey-Saint-Denis, in the heart of the Côte de Nuits in Burgundy. Since Jacques Seysses founded the estate in 1967, the name has stood for purist elegance and meticulous craftsmanship. The winery cultivates some of the region's finest vineyards – including the Grand Crus Clos de la Roche and Échezeaux – working with great dedication according to biodynamic principles.
What makes Dujac special is the philosophy of letting the terroir speak for itself. The Wines are defined by finesse rather than power: elegant Pinot Noirs and complex Chardonnays with a fine structure, deriving their strength from elegance, not overripeness. Dujac deliberately experiments with whole clusters and extended ripening periods, which gives his Wines an inimitable complexity and aging potential.
Today, Jeremy Seysses carries on the legacy of the winery, prioritizing quality over quantity. Each bottle is a true work of winemaking artistry, reflecting the estate's decades of expertise.
At Wine In Time you'll find a curated selection of these coveted Burgundy classics – perfect for those who appreciate true elegance and winemaking expertise.

The Dujac Aux Combottes 2020 is a Premier Cru from the heart of the Côte de Nuits, vinified by one of Burgundy's most prestigious wineries. Domaine Dujac cultivates its parcel in the Aux Combottes vineyard with the utmost care – and it shows in the taste. This site, nestled between Gevrey-Chambertin and Chambolle-Musigny, unites power and finesse in rare harmony. Here, Burgundian Wines are created that uncompromisingly reflect tradition and terroir.
The winemaking process is classic: after spontaneous fermentation, the Pinot Noir matures for around 18 months in French barriques, some of which are new. Dujac emphasizes restraint – no over-extraction, no fining, no filtration. The result is a wine of transparent purity that reveals its terroir unfiltered. The 2020 Vintage is considered exceptionally concentrated yet fresh.
On the nose, the 2020 Dujac Aux Combottes opens with aromas of dark cherries, raspberries, and floral notes of violets. On the palate, it is robust, with a fine tannin structure, lively acidity, and a mineral depth that lingers long on the finish. The finish is long, elegant, and subtly spiced – Burgundy at its finest.
