About the manufacturer
dauvissat
Dauvissat is one of the flagship wineries of Chablis and a name synonymous with unadulterated quality. This winery from northern France works according to traditional principles and consciously avoids malolactic fermentation – a decision that preserves the Wines' characteristic freshness and minerality. The acidity remains pronounced, the spice aromatic and precise.
What makes Dauvissat special is its focus on the great crus of Chablis: Les Clos and Les Preuses are classic Wines from the estate, which you'll find in our selection. These aren't simply dry White Wines – they are an expression of a terroir characterized by fossil-rich soils. You can taste the complexity, the depth, the mineral elegance that develops and unfolds over the years.
The winery works with great respect for the grape and the Vintage. No experiments, no modernization at any cost – instead, meticulous craftsmanship and an understanding of what works. This makes Dauvissat a classic you can rely on.
At Wine In Time you will find authentic Chablis that show you what this winery truly stands for.

The Preuses
The 2008 Dauvissat Les Preuses is a rarity for connoisseurs: Vincent Dauvissat is considered the undisputed master of Chablis, and his Grand Cru Wines are among the most sought-after White Wines in the world. Les Preuses, one of Burgundy 's seven Grand Cru vineyards , lies on the right bank of the Serein River and produces Wines of exceptional precision and depth. The Kimmeridge limestone soil imparts its characteristic minerality to this Chardonnay.
Vincent Dauvissat vinifies his Wines traditionally in used barrels, without malolactic fermentation – a conscious decision that preserves freshness and vibrancy. The 2008 Vintage is considered classically cool and mineral, with ideal conditions for long-aging Chablis. After years of maturation, the Dauvissat Les Preuses 2008 now displays a fascinating evolution: green fruit, delicate citrus notes, and that unmistakable flinty character for which Chablis is famous.
On the nose: green apple, lemon zest, wet stones, a hint of oyster and sea breeze. On the palate, taut and concentrated, with vibrant acidity, salty minerality, and a texture that is both silky and precise. The finish is long, cool, and imbued with an almost electric freshness. A wine that needs time—and deserves it.
At Wine In Time in Vienna, you can have this legendary Grand Cru delivered quickly and safely to your home. Discover our selection of White Wines as well and order a wine that has made history.
Serve the Dauvissat Les Preuses 2008 at 12–14 °C with shellfish, fresh oysters, crab, or lobster. It also pairs excellently with mature Comté cheese or seared scallops.
