About the manufacturer
dauvissat
Dauvissat is one of the flagship wineries of Chablis and a name synonymous with unadulterated quality. This winery from northern France works according to traditional principles and consciously avoids malolactic fermentation – a decision that preserves the Wines' characteristic freshness and minerality. The acidity remains pronounced, the spice aromatic and precise.
What makes Dauvissat special is its focus on the great crus of Chablis: Les Clos and Les Preuses are classic Wines from the estate, which you'll find in our selection. These aren't simply dry White Wines – they are an expression of a terroir characterized by fossil-rich soils. You can taste the complexity, the depth, the mineral elegance that develops and unfolds over the years.
The winery works with great respect for the grape and the Vintage. No experiments, no modernization at any cost – instead, meticulous craftsmanship and an understanding of what works. This makes Dauvissat a classic you can rely on.
At Wine In Time you will find authentic Chablis that show you what this winery truly stands for.

The Preuses
The Dauvissat Les Preuses Grand Cru 2014 is one of the absolute icons of Chablis and comes from one of Burgundy's most prestigious estates. Vincent Dauvissat has been crafting Wines of exceptional precision and longevity for decades. The Grand Cru vineyard Les Preuses lies on the south-facing slope above Chablis and produces Wines of radiant clarity. Discover more rarities in our Burgundy collection.
Dauvissat deliberately avoids fining and filtration, relying instead on spontaneous fermentation with wild yeasts and extended aging in old feuillettes. The 2014 Vintage matured for over 18 months on its fine lees, developing its characteristic depth. Aging took place exclusively in wood, without new barriques – thus preserving the mineral essence of the terroir.
On the nose, green apples, wet flint, lemon zest, and saline notes. On the palate, the 2014 Dauvissat Les Preuses reveals its electrifying side: vibrant, crystalline, with an acidity structure like a taut bow. Mineral notes permeate the wine from start to finish, accompanied by white blossoms and iodine. The finish is endless, salty-fresh, and almost painfully precise.
At Wine In Time you'll find hand-picked Grand Crus like this one, with express delivery to Vienna included. Browse our White Wine selection for more great Chardonnays.
Serve the wine at 12–14 °C with shellfish, lobster in butter, or raw oysters. It also pairs perfectly with sushi or simply on its own – as a pure meditative drink for quiet moments.
