About the manufacturer
Sine Qua Non
Sine Qua Non is a California winery from Paso Robles, renowned for its unconventional and extremely limited productions. The founder and winemaker follows a radical philosophy: each bottle is a work of art, each Vintage an experiment with its own name and often its own design.
You won't find any standard Wines here. Sine Qua Non works with unusual grape blends and boldly experiments with vinification and style. Wines like "The Hated Hunter" or "Kolibri" are an expression of this artistic freedom – intense, complex, and often polarizing. The winery deliberately produces in tiny quantities, making these Wines highly sought-after collector's items.
Quality is non-negotiable. Despite the playful approach, the Wines produced possess great depth and aging potential, offering a unique interpretation of the Californian terroir. Each bottling tells a story and challenges you to reconsider your expectations of taste.
At Wine In Time you will find a curated selection of these rare treasures – for all those who dare to drink beyond the ordinary.

Sine Qua Non is considered one of the most iconic wineries in the New World – each bottling is released in a strictly limited edition, each label a work of art. The Five Shooter 2010 was made from hand-picked Syrah grapes from first-class vineyards, vinified in French oak barrels with extended maceration and spontaneous fermentation. This magnum version guarantees even greater aging potential and drinkability for decades.
On the nose, a complex bouquet of cassis, dark chocolate, purple blossoms, and Provençal herbs unfolds. On the palate, the Sine Qua Non Five Shooter Syrah 2010 reveals a silky smoothness, monumental structure, and fine-grained tannins. Notes of espresso, olive tapenade, and black cherry carry you through to the endlessly long finish, characterized by mineral freshness and spicy depth.
